Spicy Honey Vinaigrette

We have been eating a lot of salads in our house lately. While the fresh ingredients aren’t exactly the least expensive way to eat in the middle of winter, it is the healthiest for our family.

We’ve been working really hard at changing our eating habits and getting all the junk out of our house… now that doesn’t mean we don’t go out for pizza once in a while, or even indulge in a small giant bowl of ice cream every so often… we are just making better choices for us.

After posting a pic of one of my recent salads on my Instagram account the other day, I’ve gotten a lot of feedback about the salad dressing I made. It was delicious and simple…
and I’ve made it two more times since then.

It was super simple too!

Spicy Honey Vinaigrette
(From Simply Sated)

1/3 Cup Apple Cider Vinegar
1/3 Cup Agave Nectar (Can also use Honey)
2/3 Cup Olive Oil
1 Teaspoon Sriracha Sauce (Or more if you like it spicier or none if you don’t like spice.)
1 Tablespoon Soy Sauce
1 Tablespoon Grated Ginger
1 Clove Garlic
1 Teaspoon Salt

Add all ingredients to a blender and blend until smooth.

This dressing was a huge hit with my family.
Even Zoie liked it.
It only took a minute to throw together and it kept in the fridge until we finished it off for lunch the next day.

The chopped salad above was also super simple and super yummy.

We mixed up the following, but you can add or delete anything you see fit.
Chopped Romain Lettuce
Chopped Kale
Sliced Brussel Sprouts
Chopped Roasted/Unsalted Almonds
Sunflower Seeds (we used salted, but either would be good)
Dried Cranberries
Dried Blueberries
Sliced Fresh Strawberries
Feta Cheese

All of this was deliciously paired with some roasted salmon and pan seared asparagus.
